Sorry about the title. I wanted something short and “PDQ Pork and Green Onion Chinese Stir-fry” just didn’t have the right ring to it.
豚肉とねぎの中華炒め (Pork and Green Onion Chinese Stir-fry)
Makes 4 servings: 114Kcal and 69 yen each.
Ingredients:
- 200 g pork (thin strips)
- 1 1/2 stocks of green onions
- 1 piece of ginger
- 1 clove of garlic
- starch
- vegetable oil
- sesame oil
- salt
- pepper
Seasoning Mixture:
- small amount of Chinese soup base
- 1/2 c hot water
- 1 Tbls sake
- 1 tsp sugar
- 1/2 tsp salt
** I don’t know what Chinese soup base is, so I took it to mean a little bit of dashi, soy sauce, and extra sugar to off set the soy sauce. It worked out alright.
Directions:
1. Cut the pork into 3-4 cm wide slices. Sprinkle with salt and pepper. Cut the onions including the green part at an angle.
2. Finely chop the garlic and ginger. Stir-fry onions and pork with 1 Tbsp vegetable oil.
3. Add the seasoning mixture. Add 1 tsp starch to boiling water.

FYI, Chinese soup base is called Wei Yu (味玉), has a more meaty flavor than dashi, and is sold in red cans of condensed powder. In my grocery stores it’s usually pretty close to the oyster sauce.
Yeah, just look for the Asian foods section of your local grocery store. . . . No, really.
